While change is an inevitable part of life, there is always some value in doing things the way they have always been done. Nestled in the village community of Watson’s Bay, The Milk Bar is showing that once you hit on a formula that works, there’s not much need for change.
Opened in 2014, for almost half a decade owners Con and Olga Georgiou have been serving classic burgers, milkshakes and coffee, alongside a range of daily necessities that in the words of Con, “have brought life to the bay.”
From commuters who stop by on their way to the city for a Monday morning coffee, to day trippers who come to Watson’s Bay for a moment of calm, The Watson’s Bay Milk Bar has got the right ingredient.
In addition to the dry goods and household products that any self-respecting general store would stock, Con and Olga serve a tight range of rolls from the classic egg or salad roll to the more inventive Cuban or falafel roll. Coffee is by Coffee & Co. Roasters and while Con is seeing a trend towards piccolos, macchiatos and espressos as the regular clientele look for a beverage that highlights the complex flavours of the Excalibur blend, The Milk Bar also offers an inventive lightly-whipped freddo that is perfect for the warmer summer days.
As the days get longer and the temperature rises, Con is looking forward to seeing the regular faces of those who make the annual pilgrimage to ‘the Bay’.
“People that come here traditionally in summer, they come back to the store.”
With coffee that’s spot on and a food menu that gets the basics right, it’s a winning combination for the Watson’s Bay Milk Bar.
